As you know they could have any oven they wanted they chose this one because of the long lasting durability, no brainier operation and the ability to turn out a perfect product every time. Professional bakers prefer electric over gas for a more even, more controllable distribution of heat.
You won't find any digital displays or elaborate controls on any Market Forge machine whether it's a kettle, steamer or oven. Their design philosophy is that the more electronics you add to a machine the more likely you are to have a malfunction. There are no printed circuit boards of any kind in these ovens - nothing to pop and smoke leaving you unable to produce. What you will find on these beautiful ovens is wiring that is heavier than it has to be, extremely heavy duty, oversized ( 28" deep) stainless oven racks and a heavy gauge all stainless steel interior that is unheard of in most oven brands because it is too expensive to build. The Power Saver II option will allow you to save money while at the same time kicking production through the roof!
