Adding gelato to your cafe or similar operation has been in the back of your mind for years now, and every time you turn around to inquire about it, you get farther and farther discouraged by the high cost of doing that. My offering will put a smile on your face, and not just because of the cost, but because it will meet the highest expectations you had from gelato. Let's do a little excercise together:
Your idea was to add about 20% to your current sales of your cafe, and since most operations are in the $500.00 daily range, you would expect that 20% to be $100.00. I want to assume that your sales of gelato will be twice that much. In that case, you need to sell 70 x 3 oz servings @ $3.00, a very modest goal, I am sure. Since each pan in this case holds 1/2 gallon, (2 liter pans) then we have available 256 oz (128 x 2). As you can see, you don't need to climb Mount Everest to succeed, but rather a small hill.
